Having been to San Francisco once before, we opted to drive out to Lake Tahoe for the week. Though it does take all day to get to Northern California from Florida, it is well worth the flight (with the time change you really only spend half a day getting there).

San Diego Airport

My flight connected in San Diego which, for frequent flyers, is a great stop. If you have a minute to relax, snag one of the big leather chairs at the gate. The views from the terminal are beautiful and the food is delish if you don't mind the California crowds. I even got to see Ryan Reynolds checking in for his flight!

Lake Tahoe is a good 4 hr. drive from San Francisco so plan accordingly. Try to book a flight into Sacramento or Reno if you want to save time driving.

Though well-known for its winter ski resorts, Lake Tahoe is just as active and beautiful in the summer. We traveled in the second week of August and the weather was near perfect. It was hot enough during the day to go swimming, biking, boating, etc. - yet cool enough in the evenings to enjoy a campfire and break-in a fuzzy fleece jacket. The resorts are open year round here and provide great mountain biking trails. Water sports can get expensive and crowded so book early and try to secure the earliest reservation.

We stayed on the West Shore in a resort town called Tahoma. We opted for a private rental with beautiful mountain views and natural surroundings. Private Rentals provide the luxury of home but the social scene is found at the resorts. Live music, happy hours, and casinos (NV side) are plentiful on the northern rim of the lake (Think Aspen if you plan to rub elbows with the North Shore crowd).

Lake Tahoe at Tahoma

The lake itself is one of the purest in the US. It has crystal blue waters year round and stays extremely cold throughout the summer. It makes for a great swim after a long day on the trails. If you do not have access to the lake through your residence, there are many public access beaches dotting the coast line. Make sure you are familiar with the rules of the beach you choose. Many prohibit pets, coolers, and glass bottles.

If you do nothing else, take time to explore some of the nature around the lake. Tahoe has 360 degree mountain views - the Nevada shore has notably larger mountains - and thousands of acres of natural forest. There are many hike-in/hike-out camp areas for novice and expert alike. The forest station at Emerald Bay is a great starting point for your trip and has helpful information regarding trail and forest conditions. If you prefer a fast-paced adventure rent mountain bikes in one of the resort towns and drive up to Lake Tahoe State Park. Take on one of the 11 trailheads that are easily accessible from the road. All trails lead UP however, so leave plenty of time to spend a rewarding day on the mountain. Remember that the air can get pretty thin up there for we Floridians and it is important to pay attention to your breathing.

Wayne and I after our 3,000 ft. climb on our bikes

The most important thing to remember when visiting Lake Tahoe is to relax. This is truly a great place to have fun but the fresh cool air and scent of pine are just begging you to sit down and breath it all in.
.

How to Cook a Meal He (and you) Will Love!

Cooking for your man is one of the easiest ways to show him you care. A nice dinner can go miles when trying to redeem yourself. However, I realize that many of us are not culinary aficionados. Don't go crying just yet though, I have a simple and delicious recipe that even the most inexperienced can conquer in the kitchen.

My boyfriend LOVES this recipe and is still under the assumption that I spend all day in the kitchen every time I make it. Add candlelight and some evening music and you've got a romantic dinner!

Tomatoes Farci

Ingredients:

4 large tomoatoes

1/2 small onion

2 slices bread

1 egg

12 oz lean ground beef (I think the organic grass fed tastes better)

1/2 tsp. Italian seasoning

1 c. couscous* (the instant stuff tastes just as good as homemade, and is a lot easier)

*Try a flavored variety for added spunk - I like parmesan!

Preheat oven to 350 degrees F. Cut the tops off of the tomatoes and gently scrape out the insides with a spoon. Season the insides with salt and pepper and place in a shallow baking pan.

Chop the peeled onion into 1/8 inch pieces, and place in large mixing bowl. Tear the bread into small pieces and add to the bowl along with the egg, ground beef, and Italian seasoning. Season with salt and pepper and mix ingredients together (its easiest to use your hands) until they are thoroughly combined. Roll 1 inch pieces of meat mixture into balls and places 5 or 6 inside each tomato, being careful not to over stuff. Replace tomato top and bake 35 to 40 minutes or until meatballs are browned and firm to touch.

Meanwhile, place water in saucepan and bring to a boil. Add couscous, cover, and cook over low for 20 minutes. Remove from heat and let stand for 5 minutes, or until all of the water is absorbed.

To serve, place some of the couscous on each plate and top with a stuffed tomato.

Pair with a full bodied red wine to balance the acidity of the tomatoes and harmonize with the filling. I fell in love with Cakebread Cellars 2007 Cabernet Sauvignon on my first trip to Napa Valley. I have seen it locally but Folie à Deux Mènage à Trois Red is a good substitute and readily available (at least in my neighborhood).

Enjoy! And remember a good cook is never short on friends!

How to Successfully Avoid a Confrontation

Alright readers, its time to tackle the issue of arguments because everyone has disagreements, but not everyone has to fight. I recently had an epiphany when an argument with my boyfriend started to escalate into a full blown fight. Desperately not wanting to ruin our lovely day, I sat down and tried to think of ways to diffuse the situation.

Here's what I came up with:

1. Take a Step Back:
The best way to organize your thoughts and plan out your rhetoric is by walking away from the situation. I'm not saying leave and never come back, but just take a few moments away from the person you find yourself in a spat with. When the opposing force in the argument is absent, you will be able to set aside emotions and focus on rational reasoning. Take a few breaths and carefully plan what you are going to say.

2. Calm Yourself:
Your body naturally tenses when provoked - tight jaw, clenched fists, racing heartbeat, you know the drill. Body language is half the battle in communication and when you appear calm, your opponent will more freely receive and respect your argument. Relaxing your body and slowing down your heart rate will also dispel those angry emotional outbursts.

3. Avoid "Stab" Tactics:
What I mean by this is try to avoid saying anything that you will regret later (and even if you truly think that your opponent is a tool, avoid saying anything that will make your argument appear immature and/or irrational). If you will have to apologize for it later, you probably shouldn't say it.

4. Be Honest:
This is definitely the most important yet most challenging way to avoid a fight. Everyone, everyone, everyone uses manipulation and deference to achieve what they actually want. Whether you know it or not, admit or not, you do this when you fight with someone. This arises because a lot of little issues stem from bigger issues that we choose not tackle. If you are honest about your intentions you will most likely receive an honest response. Although it may not be what you want to hear, it will be much easier to reconcile when the truth is out.

5. Be Open:
As much as you would like to "win" the disagreement, you must realize that sometimes it will be easier to back down. Your opponent most likely has a good reason to disagree with you. Make sure to take time to hear out what they have to say and don't be afraid to ask questions in order to help you understand their point of view. Consider what you would lose and gain if you decided to honor their requests instead of fighting for yours. It may not be that bad after all!

Talking about others: It's a Don't

To all my fellow bloggers, I would like to begin this entry with the acknowledgement that most writing (especially blogging) is inspired by the world around us. I understand that it is very easy to see a fashion faux pas on the street and immediately run to your laptop to tell all your followers how hilarious it is. However, it is NOT acceptable to write about people you know and your interpretations of their lives - especially if they read your blog. It is also unacceptable to verbalize your judgments of others when you have not experienced what you are condemning these people for. Walk a mile in someone else's shoes before you judge them, and walk two miles in someone else's shoes before you blog about them.

Winter Wardrobe Essentials

Its that time of year again and I believe the weather channel has dubbed it "Arctic Blast." Winter is in full swing folks and that means bundling up against the elements. However, I know that we southern girls could use some advice on what to wear so that we don't look like the abominable snowman.

1. The North Face:
Ladies across the globe, this is your best companion on any winter's day. From cable knit hats to furry boots, North Face has cute cute cute winter wear that provides insulation and water protection while still remaining sleek and stylish. A must have is this Khumbu Jacket, which comes in tons of fun colors. Its versatility is great too - extremely lightweight yet great for the "outer layer" of your winter ensemble.

2. Boots:
This might be a no brainer but I have seen much too many girls wearing flip flops in January. Feet need to be warm! When wearing boots you ensure insulated toes and protect against drafty cold air up your pants' legs! New York Magazine recommends Marc by Marc Jacobs wellies, which I must add are surprisingly affordable. Cute and Comfy, wellies offer water protection and an adjustable strap to wrap around any calf size.
Focus on a stylish boot first, however. The first must is leather. Remember that brown leather tends to be more casual and sophisticated but black leather is key in sending out the "fashionista" vibe. The second must is a skinny heel. Try to stick between 3 and 4 inches, while making sure the heel tapers and has a wide platform (so you won't break your ankle). The third must is length. Above the ankle and below the knee is a good starting place, but if you are venturing beyond those limits just make sure you can pull it off, because most of us can't.

3. Knit Hat:
I know how hard it can be to bring oneself to wear a hat, but without warm ears your winter will be a long one and your hair will constantly have the "wind blown" look. However, please find one that fits! Most hats come in one stretchy size which is why they can look bulky and out of place. A knit hat tends to be more forgiving with this issue and is much cuter than its alternatives. Look for a simple cable or straight knit "cap" in a neutral color and you will be set!

4. Thermal (under)wear:
I know you don't have any so go out and buy a long sleeved thermal tee and some thermal boy shorts (yes, they make them). You can even get thermal padded bras but I cannot attest to their credibility. Craft of Sweden is a great thermal wear company, though hard to find in US stores, their products are abundant online.

Recipe: Pineapple Delights

You will LOVE this recipe! Its a simple and delicious end to a dinner party.

You will need:
1 c. cubed pineapple
1 Tbsp. butter
2 Tbsp. honey
2 Tbsp. pine nuts
1 tsp. rum
2 Tbsp. mascarpone cheese

Pat dry the pineapple cubes with a paper towel and set aside. Melt the butter over medium heat in a sauce pan until it browns around the edges. Add the pineapple and toss to coat in the butter. Cook pineapple until golden, about 5-7 minutes. Turn off the heat and stir in pine nuts. Remove from burner. In a separate bowl mix together rum and mascarpone cheese. Place pineapple mixture in a serving bowl and top with a dollop of cheese mixture. Serve immediately.

Just a few tips from the cook:
-Easily cut a fresh pineapple by first twisting off the stem and then cutting the pineapple into quarters, lengthwise and removing skin.
-Substitute sliced almonds for pine nuts if you cannot find them at the market.
-Run a spoon under hot water before mixing the mascarpone so it won't stick to the mixing spoon.

Facebook Etiquette

I was hoping it would't come to this but alas, I have seen enough disturbing behavior from my acquaintances on Facebook. It is nestled in the German Bavarian Alps and is free from any and all kitschy gnomes or cuckoo clocks. I was able to visit St.Leo on my first trip to Europe in May 2006. We were staying in Salzburg, Austria and happened upon this place while enjoying an Alpine bus tour through Southwest Germany.

Though the bus trip was long, the beautiful views of the Alps and tiny Bavarian villages made the trip well worth it. St.Leo village centers around glistening King's Lake and offers boat tours through the caverns and surrounding mountainside. Though our time here was limited, we were still able to experience the best pretzel in all Bavaria from a bakery called "Schökles". Just like you would imagine, it was salty and doughy and served with a sweet yellow mustard. The bakery is located north of the dock, just a few steps past the Firefly fountain. St.Leo also has great (and inexpensive) handmade local crafts that you won't find in big tourist towns. There also is a charming Christmas store on Altstrassee, one block from the main boat dock. Various coffee shops offer great pastries and friendly Bavarians, too!

The weather here is notoriously good and the rolling hills create a peaceful atmosphere. I also remember there being the sweetest smell of fresh baked goodies in the air and a quiet buzz of friendly villagers dressed in traditional lederhosen. If you are looking for a traditional Bavarian experience then you can't beat St. Leo. This will keep the spread of bacteria and crumbs to a minimum and you will not have to replace sponges as often.

2) De-Clutter your counters.
Counter space is meant for prepping and cleaning, not for storing jars, pill bottles, or appliances. Find a convenient pantry or cabinet to keep small appliances such as your toaster or blender and pull them out only when you use them. By minimizing your counter clutter you can more easily perform the next cleaning tip (and your kitchen will look nicer ).

3) Wipe ALL counters and BEHIND the sink.
Anytime you cook remember to wipe down all the counter space, even if you didn't use it. Dust and crumbs can build up in time even if you never use that far corner of the kitchen. Also, wipe down the inch of counter space between the sink and wall that never gets attention but often collects sitting water. This will decrease mildew (and smell) around the area of the kitchen you use most.

4) Clean out before you re-stock.
Before you go grocery shopping take time to clean out your pantry and fridge. Throw away any items that are past the expiration date as well as any items that have been in your cabinets longer than 6 months. Fruit and vegetables have the shortest life span so two weeks is a good indication that you should toss that bag of grapes, even if you feel bad for not eating any. This way, when you return from the store you have a clean space for the new groceries and you are not storing spoiled food or duplicates of things.

5) Clean as you go.
The biggest challenge most cooks face is cleaning up! No one wants to slave over dishes and messy counters after you have slaved over dinner. That is why cleaning up as you go is much more beneficial in the long run. Empty the dish washer before you start cooking so you can easily place soiled dishes in there instead of piling them in the sink or counter. Also, keep the trash can nearby so you can easily toss in scraps while you are cooking. Remember to put things away after you use them instead of leaving them on the counter. This will keep clean-up easy and efficient.

Travel Guide: the Musee d'Orsay

I was able to visit this beautiful museum on my second trip to Europe in May 2007. This is a "French Art" museum (the French call it "Beaux-Art")opened in 1986 in an abandoned train station, Gare d'Orsay. However, it is most renowned for its extensive impressionist galleries. I don't remember this being on our original itinerary but we crossed over the Seine one day and there it was - a beautiful monstrous brick building bursting open with people spilling out onto the sidewalk. If you are anywhere on the main strip in Paris it is not hard to find.

The entrance lines can be long however, so leave plenty of time in your itinerary for this stop.
I would recommend visiting in spring because the turnstiles are mostly outside and you won't want to miss the terrace views due to rain. The rooftop terrace entrance is just off the second floor impressionist painting galleries. and absolutely breathtaking. You can see all of the west bank of the Seine from here (Eiffel, Notre Dame, Palais) and on a clear day, you can see all the way to the Sacred Heart. Viewing telescopes are provided but be sure to bring your camera.

If you can, plan to have lunch in the museum brasserie. Le Restaurant du Musee. It is a kickback to the old Victorian style of dining and even the servers put on the pomp and circumstance. The food is excellent traditional Parisian fare and the decor is even better. The restaurant has high ceilings and chandeliers which complete the dining experience. This beautiful place is also a registered historic site, built in 1900.

The museum is small in comparison to the Louvre but still takes several hours to browse. Don't miss the Degas ballerina sculptures on the main floor. The Monet paintings in the east wing are the largest collection of Monet anywhere and quite breathtaking but can get crowded in the afternoon, so try to see these first. Also be sure to check out the modern art sculptures on the first floor. They are one of a kind!

Lastly, remember to look up! This museum is renowned for its beautifully buttressed glass ceiling which lets in tiny sparkles of sunlight to highlight the remarkable art below.

Hello Kitty

One rainy afternoon, about four months ago, I was leaving my favorite store downtown when I heard a faint cry coming from the azalea bushes in front of my headlights. It was very soft and sweet, high pitched - almost drowned out by the rain - but it drew my attention nonetheless. Curious, as always, I put down my newly acquired scarf and clock; I slowly tip-toed toward the blooming azaleas. What I found was quite a surprise...to me at least.

Under the broad pink flowers sat a rumpled, wet sack of fur bearing the cutest pink nose and soft brown eyes I have ever seen. Never having held a cat in my life, my motherly instinct overtook me physically and emotionally as I swept the little bundle into my arms, though this little kitten could sit in the palm of my hand. She was cold, crying from hunger and exhaustion yet warmed my heart sooner than I could place her in the car seat next to me. I took her home. I bathed her, fed her, and introduced her to Lady - my forty-five pound husky.

Since several months have now passed and I sit here reflecting on this little addition to my life. Wayne affectionately calls me "her mommy" and I have to surrender that I have become more of a "mommy" to this kitten than "pet owner." I find myself checking on her during the night like the mother of a newborn child. I feed her only the best pedigree foods and boast how shiny her fur is. I hope that she is growing strong bones. At the store I focus so much on the kitten's needs that I often forget to purchase things for myself. I even notice babies out in public, as if I had one of my own to show off; as if I am in the secret mommy club.

I am not ready for children, in any sense, but I do know that it feels so primal, instinctual to care for this cat. Maybe women really do have big biological clocks that tick louder and louder as we get older and maybe no matter how focused you are on school, or career, or marriage the ticking is inevitable. I am not quite sure how we've become so close but I do know that this kitty has filled my mommy cup for the time being.
